Our kids' favorite weekend morning meal- banana/ walnut waffles. No eggs, dairy, or oil involved in the making of these super satisfying waffles. My husband likes to top his with 100% natural peanut butter, mangoes, white peaches, and blueberries, but almost any fruit would make it equally as tasty. The keys to keeping these tasty waffles a nutritional powerhouse are: using plant milk instead of traditional dairy milk, the use of the mashed banana and applesauce in place of eggs and oil, and using a whole grain flour instead of the usual highly processed white flour that has most of the fiber and beneficial nutrients removed in processing.
Recipe below adapted from Isa Chandra Moskowitz:
1 3/4 C any plant milk 1/4 C water 2 tsp Apple cider vinegar 2 Bananas 3 Tbsp Natural Apple Sauce 3 Tbsp Pure maple syrup 1 tsp Vanilla extract 2 1/4 C Whole wheat flower (or other whole grain flour) 1 tsp Baking powder 1 tsp Baking soda 1/2 tsp Salt 2 tsp Cinnamon 1 C Walnuts (finely chopped)
▪︎Combine plant milk, water, and apple cider vinegar and set aside.
▪︎In large bowl, mash bananas. Add the milk mixture, apple sauce, syrup, vanilla, and stir.
▪︎Add the remaining dry ingredients and stir.
▪︎Pour into waffle maker and enjoy
Top with any fruit, nut butter, and a touch of pure maple syrup if you desire, although that I find that with the more sweet, delicious, juicy fruit that you top it with, the less pure maple syrup you may want to use.
