One of the easiest way to feed the family a quick healthy meal is to make a plant-based Buddha Bowl.
This one has a sweet potato (cooked in the microwave in under 3 minutes!), purple cabbage, brown rice, tempeh, sweet corn, sugar snap peas, carrots, kale and peaches. It's topped with chia and sunflower seeds, and a soy-peanut butter-lime sauce which really makes it delicious.
Teens approved too!
